Dubai sets off fireworks in several places at midnight (Burj Khalifa, Atlantis and the Palm, Bluewaters), and from a boat anchored off the coast you can see more than one at once. That is the whole case for doing this on the water rather than from a rooftop, and it is a good one.
The evening runs long. Boarding is usually around 19:00, the boat runs out and anchors before the water gets busy, dinner is served at anchor, and you sit through midnight before coming back around 01:30. Getting back into the Marina after the fireworks takes time because everyone leaves at once.
Pricing on the 31st is not hourly and it is not comparable to any other night of the year. Ask early. September and October are when the good boats and the good anchorages get taken, and by the second week of December there is very little left.

Why a New Year yacht party is priced by its own rules
New Year is the one booking on the calendar that does not follow the normal rate card. Charters on 31 December are priced per boat for the whole night rather than per hour, cost several times a normal evening, and carry a non-refundable deposit when every other date allows a move.
That is not opportunism. The charter occupies a boat and its crew for six or seven hours on the highest-demand night of the year, on an evening the crew would otherwise spend with their own families, and it cannot be resold if you cancel because everyone who wanted that date booked it weeks earlier.
The practical implication is to decide early and commit. Asking in September gets you a choice of boats; asking in December gets you whatever is left, at a price that has not softened.
The night, hour by hour
Boarding is around 19:00, which feels absurdly early for a midnight event and is not. The run out is short but the anchorages fill from about 21:00, and the good positions go to whoever is there first.
Dinner happens at anchor while the water gradually fills with other boats. There is a long and genuinely pleasant stretch between about 21:30 and 23:30 with the coast lit and nothing to do. Midnight lasts a few minutes, and then every boat leaves at once — the run home is slow, and alongside at 01:30 is normal rather than a delay.
What you see from the water
Dubai fires several separate displays simultaneously at midnight — Burj Khalifa and Downtown, Atlantis and the Palm, and Bluewaters. From land you see one of them. From a boat anchored offshore you usually see two or three at once, and that is the entire argument for spending the night on the water rather than on a rooftop.
Downtown is five kilometres inland, so the Burj Khalifa display reads as a distant column from offshore rather than up close. The Palm and Bluewaters displays are the ones a boat sees properly.
